Hi Mark! Yes, the silicone baking tray works better than the paper cupcake ups as they "don't stick." By this I mean they still stick a little bit but work way etter than the paper cupcake cups.

I tried greasing the paper cupcake cups with avocado oil, but the eggs still stuck to the paper. I feel that a lot of egg is wasted because it gets stuck to the paper.

I wouldn't put the egg mixture directly into the cupcake tin WITHOUT any paper cups.

I'm guessing the best way to go is to use a cooking spray (which is what recipe suggests), but I didn't have any, and I haven't tried it yet.
