Do I Have to Eat All of It?
2022 Cooking Challenge (#2 Spinach Rice): “I can’t believe I cooked it!”
This year my goal is to cook 24 food dishes that I’ve never cooked before by December 31 — this marks #2 of 24. If you know me personally or read my 2022 Cooking Challenge article, you’ll know that I struggle with cooking and have a messy relationship with the kitchen. My husband says my cooking is “not bad” which translates to “not good.”
My aim this year is to set the cooking bar past “not bad” or according to my 11-year-old son, “not horrible.”
I got an Instant Pot for Christmas and I’m scared of it.
It’s big, clunky, and has 16 different settings, but I fell in love with the word “Instant.” I asked for one, thinking it would save me time and force me to cook because I have this nasty relationship with cooking that I’m trying to better.
I’ve procrastinated for about 7 weeks so I decided now is the time to open the box. I realized that the Instant Pot would not miraculously cook for me and that I needed to put in some effort.
Tonight I tried it for the first time to make Instant Pot Spinach Rice.
